Don’t really feel inspired to write a whole blog post but I did make pasta.
Aubergine pesto pasta, oh my!
I cooked the aubergine in the oven for like 30 min or so, made a pesto out of garlic, toasted almonds, basil and olive oil, I caramelized some onions and I cooked a bit of tomato sauce. When the aubergine is done, mix the flesh of the vegetable with pesto, caramelized onions and a tablespoon of tomato sauce, top it with some rucola and there you go!
Very easy but a bit time consuming because of the aubergine. Other than that, totally worthy and a very delicious meat alternative.
