Money spending and potato wedges

So there is a new holiday, the 26th of the month. Every month. I get my payment then. And I spend lot. Like this weekend, on books.

But that’s not the point, it was an investment and I purely love books. And otherwise I wouldn’t have come up with this coconut chilli lemon wedges recipe inspired by A Simple Table cookbook.


Well, the original recipe required boiled potatoes fried in a pan but I decided that wedges baked in the oven were cooler so wedges it was!

It is so simple and so yummy and so light and OMG!

Thank you 26th of the month for keeping me full and happy. And for paying the rent for that matter.
