Dal inspired quinoa salad for uninspired days

Made this dal inspired quinoa yesterday since I didn’t have any lentils around or supermarkets open.

I chopped one onion, added the grated garlic and ginger, spices (one teaspoon of cumin, coriander, chilli flakes, ground cardamom and ground cloves), coated everything in spices, added a cup of quinoa and 1 litre of vegetable stock and let it simmer for like 30 min or so.


The whole house smelled like an Indian restaurant! So good!

I also made some kurdish flatbread, nane-tire, that I topped with some garlic, herbs and oil! Divine!

The good thing about this is that is a pretty versatile dish. You can add more water, add some vegetables, have yourself a hearty quinoa stew. 

You can eat is as it is. 

You can put it in salads, like I did or you can just have an egg on top and some feta cheese and voilá.
