Apple kale soup

Another healthy hit. One that makes me think of winter to be honest but hey, did I mention that it’s healthy?

You’ll need:

  • 1 tbsp coconut oil
  • 2 medium sized potatoes
  • 1 carrot
  • 1 apple
  • 1 onion
  • 600 ml chicken/vegetable stock
  • 1 tbsp vinegar
  • 200 grams frozen kale
  • salt
  • pepper
  • walnuts and chilli flakes for toppings

METHOD:

  1. wash, peel and chop your veggies and the apple;
  2. in a pot, add the coconut oil and add the chopped veggies and apple to it;
  3. cook it for around 7 minutes on medium high heat until the apple gets soft and the onion translucent;
  4. add the vinegar and the stock to the pot;
  5. cook until the carrot gets done;
  6. add the frozen kale to it and cook for another 5 minutes;
  7. gently place everything in a blender and blend until desired consistency;
  8. in a frying pan add the walnuts and give them a stir for 2 minutes – make sure you don’t burn them;
  9. toast some bread;
  10. add the soup to a bowl, add the walnuts and chilli flakes on top and enjoy it with your toasted bread.
